Asparagus season is here!

Another reason why I love to eat seasonally is the joy that comes when a food you haven't tasted for the best part of a year finally reaches your plate again. That first bite after such a long absence, nothing compares to it! These magnificent and delicious specimens came from my favourite @whiteleysfarm

My favourite way to cook asparagus is in a pan with plenty of salted organic butter, until perfectly al dente.

When I was growing up, scrambled eggs and smoked salmon was always a celebratory meal, usually saved for Christmas day. I feel that the start of the new season is a real cause for celebration, so this has been my first asparagus meal.

WILD GARLIC AND BASIL AVOCADO PASTA A super quick,

WILD GARLIC AND BASIL AVOCADO PASTA
A super quick, nutritious midweek lunch, it only takes as long as the pasta takes to cook! I use red lentil pasta, for its high protein content to keep blood sugars stable.

1 medium avocado
Handful of wild garlic
Handful of fresh basil
A generous glug of extra virgin olive oil
A squeeze of lemon
Salt and pepper to taste.

Whilst the red lentil pasta is cooking, put all ingredients together in a food processor and whizz to the desired consistency. Stir together the cooked pasta and sauce, serve and enjoy!

I know I know, my food presentation is terrible - but when I'm feeling low in mood and high in anxiety, seeing Instagram-perfect pictures makes me feel a whole lot worse! Seeing how things look in reality is so much better for our mental health.
